Chorizzo Soup A’la the Girl-ChildDifficulty: Easy
15 ml olive oil
1 chorizo of about 20cm
garlic cloves to taste
1 cup of lentils
1 red onion sliced and diced
1 tin of chopped tomatoes
1 red or yellow pepper (not green) diced
1.5 liter chicken stock
2 handfuls of chopped mixed herbs like spring onions, coriander or mint
- Fry the chorizo until it is crispy in the oil and then add the onion and garlic and cook for a minute or two
- Add the rest of the ingredients except for the herbs and simmer for about 50 minutes or until lentils are soft.
- Mix fresh Herbs in and serve with freshly baked bread
- This is an adapted recipe. We often find nice recipes online or in magazines but then we cannot always find the correct ingredients on the island so we improvise a lot.
