Chorizzo Soup A’la the Girl-Child

Ingredients

  • 15 ml olive oil

  • 1 chorizo of about 20cm

  • garlic cloves to taste

  • 1 cup of lentils

  • 1 red onion sliced and diced

  • 1 tin of chopped tomatoes

  • 1 red or yellow pepper (not green) diced

  • 1.5 liter chicken stock

  • 2 handfuls of chopped mixed herbs like spring onions, coriander or mint

Directions

  • Fry the chorizo until it is crispy in the oil and then add the onion and garlic and cook for a minute or two
  • Add the rest of the ingredients except for the herbs and simmer for about 50 minutes or until lentils are soft.
  • Mix fresh Herbs in and serve with freshly baked bread

Notes

  • This is an adapted recipe. We often find nice recipes online or in magazines but then we cannot always find the correct ingredients on the island so we improvise a lot.
