Wintry day Lamb Stew

Ingredients

  • 500 g mutton/lamb shank pieces

  • 1 big beetroot, peeled and cubed

  • 2 onions, cut in quarters

  • 3 big carrots diced up

  • Half a butternut diced

  • 1 tin of Tomato’s

  • Three Courgettes diced

  • Salt, pepper and garlic and Herb Spice to taste

  • Two whole garlic cloves (optional)

  • Some water for cooking and some oil for braising the meat

  • Basmati or Brown rice – 1 cup should be enough for 4 people

Directions

  • Brown the lamb shank pieces in some oil
  • Add onions and brown with the meat
  • Add tinned tomato and tomato paste
  • Season with salt, pepper and some garlic and herbs as well as some sugar to taste to break the acidity
  • Cook slowly over a slow heat for the lamb to cook through properly
  • Add the vegetables starting with the butternut and leaving the softer vegetables for the last stretch of cooking
  • Cook rice according to the instructions on the packet

Notes

  • I am no Nigella but I can cook a stew or two and I am known as the lasagne queen in our house. This is a throw everything in type of recipe and slow cook for the flavors to really take hold and then dish up with some red wine and enjoy!! Perfect for those cold winter nights.
